How the cooking measurement converter works
The calculator converts every selected measure to millilitres, then divides by the millilitre size of the destination measure. It is a volume converter for liquids and measured ingredient volume. It does not turn cups into grams because that requires the density and preparation of the ingredient.

Converting one Australian tablespoon to US tablespoons gives about 1.353. The difference is small for one spoon but becomes important across a recipe using several tablespoons.
Identify the recipe’s country before converting
Australian recipes commonly use a 250 mL cup and a 20 mL tablespoon. US recipes use a smaller cup and tablespoon. A recipe website may not state the system clearly, so look at spelling, oven units, ingredient brands and the publisher’s location.
Use level measures unless the recipe explicitly says heaped, packed or loosely filled. Brown sugar, flour and chopped ingredients can occupy different volumes depending on how they are packed. A kitchen scale is usually more repeatable for baking.
Fluid ounces are volume. An ounce shown beside butter, chocolate or meat may instead be a weight ounce and should go through the weight converter.

Recipe conversion mistakes to avoid
- Assuming every cup is 250 mL: US recipes use a smaller customary cup.
- Assuming every tablespoon is 15 mL: the Australian tablespoon used here is 20 mL.
- Converting cups to grams without an ingredient: flour, sugar, oil and nuts have different mass per cup.
- Using heaped spoonfuls as defined units: a heap has no consistent volume.
- Scaling after rounding: round the total batch quantity after multiplying the original recipe.
Check the result against the hierarchy. In the Australian system, four tablespoons make 80 mL, not half a 250 mL cup. Five Australian tablespoons equal 100 mL.
Practical measuring and recipe limits
Measuring spoons and jugs have markings and manufacturing tolerances. Surface tension and reading the meniscus can affect liquids. Dry ingredients vary with sifting, chopping, humidity and packing. For forgiving cooking, sensible rounded volumes work well; for bread, pastry and repeatable baking, weigh ingredients where the recipe provides grams.
This converter does not adjust oven temperature, pan size, cooking time or ingredient chemistry when a recipe is scaled. Doubling a recipe does not always mean doubling cooking time.
A practical workflow for converting recipes
First identify the recipe’s country or measurement standard. An Australian tablespoon is generally 20 mL, while a US tablespoon is about 14.79 mL. Cup and fluid-ounce definitions also vary. If the source is unclear, look for clues such as oven units, ingredient brands, spelling and publisher location rather than silently assuming every cup is the same.
Second, separate volume from mass. Millilitres, cups, teaspoons and tablespoons measure volume; grams and ounces on a kitchen scale measure mass. Water-like liquids can sometimes look numerically convenient, but flour, sugar, oil, honey and chopped ingredients have different densities. Use an ingredient-specific weight table or weigh the ingredient instead of applying one universal cups-to-grams factor.
Scaling and measuring technique
When scaling a recipe, multiply every ingredient by the same batch factor before rounding. Small ingredients such as yeast, salt, spices and raising agents may not scale perfectly for very large batches, so professional or tested batch guidance takes priority. For eggs or package-based ingredients, the mathematical result may need a practical adjustment and retesting.
Use level spoon measures unless the recipe says heaped or rounded. For dry cup measures, spooning and levelling can produce a different amount from scooping and packing. Brown sugar may be specified as packed; flour usually should not be compressed. A digital scale improves repeatability, especially for baking, but scale resolution still matters for tiny quantities.
Finally, keep the original recipe and note any changes. Converting units does not correct an inaccurate recipe, substitute ingredients, change pan geometry or adjust cooking time. A doubled mixture in a deeper pan may need a different bake rather than exactly twice the time. For food safety, preservation and allergen-critical recipes, follow a tested method rather than modifying ratios solely through a general converter.
When not to convert a recipe mechanically
Preserving, canning, infant formula and specialist dietary recipes can depend on tested proportions and processing conditions. Do not alter acid, salt, sugar, liquid or thickener ratios solely because a generic scaling calculation looks neat. Use an authoritative tested recipe and the stated jar, batch and processing sizes.
Ingredient substitutions can change density and behaviour even when the measured volume is identical. Gluten-free flour blends, liquid sweeteners, different salts and chopped ingredients may absorb, dissolve or pack differently. Convert the original measure first, then assess the substitution separately.
For reliable repeat cooking, record the final gram weights that worked in your kitchen, along with pan size and oven mode. That creates a reproducible house version and removes repeated uncertainty about regional cups and spoon technique. The broad converter is most useful for interpreting the source recipe, not for pretending all ingredients behave alike.
Where the converted amount lands between available measuring tools, choose a practical method and note it. A scale may be better than estimating part of a cup, while a graduated jug may be better for a large liquid volume. Consistency across the whole batch is more useful than an impressive number of displayed decimals.
